Andy Baraghani on the dish he fell in love with in Hanoi (via healthy_ish)
I made a food itinerary sourced from friends, chefs, and fellow travelers. Pretty much all the places on my list were street food vendors. But there was one restaurant that kept coming up in my research, in Hanoi.
The restaurant, called Cha Ca La Vong, was in the Old Quarter section of the city and it specialized in only one dish . The 100-year old restaurant is an institution, and, while you’ll definitely see a couple tourists inside, it’s pretty clear why: They serve one of the greatest fish dishes I have ever tasted.
Even though there was only one dish to order, there was still a menu that read “grilled fish” at 170,000 Vietnamese Dong per person which converts to about $7.50. Within minutes, a small charcoal grill appeared at the table. My server placed a skillet on top and poured in a generous amount of oil. As soon as the oil became glossy, he added a few chunks of fish.
I grabbed the only tiny clean bowl to use as my vessel. I took some of the fish mixture, some rice noodles, a little, peanuts and more herbs. The noodles quickly became stained by the golden fish. I kept eating and refilling my bowl, falling more and more in love with every bite. As I do with most dishes that speak to me, I took a few notes on my phone .
Back home, I decided to bring the dish to life for Healthyish. It was fairly easy to recreate: All the ingredients I loved in the original dish I could find back in the States. I used
