The spiced honey is worth making all on its own. It comes together quickly with pantry staples including onion powder, garlic powder, smoked paprika, and cumin, and you can make it a few days in advance to save time. Feel free to use any other spices you might have on hand, such as cayenne pepper, to kick up the heat. The sweetener is also pretty flexible. Don’t have honey? Use maple or agave syrup instead.
Pork chops are a thing of beauty when done right, and doing them right doesn’t take much work at all., they have enough juicy acidity to cut through the richness of the pork. When you slice them up and toss them with red onion, jalapeño, lime juice, and cilantro, you get a fresh and fruity salsa that’s equal parts sweet, salty, sour, and spicy in each bite.
A few essential choices will get you on the path to juicy grilled pork chops. Start with a bone-in version, because the bone adds an extra layer of protection against overcooking the meat. Don’t trim all the fat off the chops, either—keep a thin layer, because fat is flavor, and it’s yet another safeguard keeping those porky juices where they belong.
