I'm a home cook. I love salads. Two things you'll always find in my refrigerator are lemons and butter, and in my pantry good quality chocolate and the makings for chocolate chip cookies.Such a gorgeous and incredibly delicious way to showcase the best of summer.

You can find it in practically every Tuscan and Ligurian port. Cleaning the octopus involves removing the eyes, beak, and innards, and rinsing under cold water—this is often already done when bought from a fishmonger or at a supermarket or if you have bought it frozen, but at my fresh-off-the-boat fisherman’s shop front, they are just as they were pulled out of the water. Freezing the fresh octopus helps to tenderize it; alternatively, you can buy it already frozen and defrost it at home. If you have a larger octopus, 45 to 60 minutes of cooking usually suffices. Baby octopus cooks in a much shorter time; 20 minutes can be plenty. Once cooled and chopped into pieces, it makes a delicious salad with potato, thinly-sliced celery, a handful of parsley, and a dressing of extra virgin olive oil and lemon juice (if you like, black olives go nicely here, too). Eat it room temperature or chilled—on a hot day, this is one of my very favorite meals.

Avocado Crab Rolls Recipe on Food52The first summer after my husband and I met, I made my first trek to the East End of Long Island where he spent his summers growing up, and had my first bite of a lobster roll. The sweet simplicity was a revelation. I look forward to one each time we visit our family. Lobsters certainly aren't local here in Maryland, but sweet blue crab is abundant this year. So I based this dish on my favorite parts of a lobster roll, with the avocado playing up the richness of the dish in a way that helps humble crab be a bit more exotic. We can't get the classic top split hot dog buns here - so I trim off the crusts from regular buns and toast the sides in butter. If I were at the Clam Bar in Amagansett - I'd have a Red Stripe with my lobster roll. I think it makes a nice pairing here too. This recipe makes more than enough avocado mayo for 2 rolls - so use the extra for a tasty BLT or more rolls! I had 2 people to serve and 1 avocado that was perfectly ripe so I made this for 2. Easily scales upwards.

Mrs. Owen's Unchurned Ice Cream Cake + Raspberry/Orange Flower Sauce Recipe on Food52As a child, I would beg my mother to make her 'ice cream cake.' You make a ridiculously simple faux ice cream base of cream cheese, sugar, and egg yolks, gently fold in billows of whipped cream and meringue, and freeze it over a graham cracker crust for a luxuriously smooth, cold and rich treat. Recently I unearthed the vintage recipe: The cake is just luscious as ever. I reduced the sugar somewhat to appeal to adult tastes, and added a touch of crème fraîche (the original calls for all 8 ounces of cream cheese in place of the blend of the two). In summer it is beautiful with fresh blueberries and raspberries, or a cooked raspberry sauce; you can also serve it in fall or winter with crystallized ginger, or even pretzels. It is scrumptious served perfectly plain, allowing the tang of the cream cheese to shine. The crumb crust is adapted from The Joy of Cooking, 25th printing. I reduced the confectioners' sugar and left out the (optional) cinnamon. I added a cooked raspberry sauce based on a recipe by Sally Humeniuk of the blog, Good Dinner Mom. I reduced the sugar and added a dash of orange flower water for a refreshing contrast to the rich filling. Note: This recipe includes raw eggs.
