Pour a piscine by a piscine, sure, or on a balcony, a rooftop, at the kitchen table, or wherever else you find yourself this summer.

August is the month of vacances in France. Shops, bars, and restaurants close, and locals and tourists alike flock to the south in search of fresh air and warm sun. From Saint-Tropez to Marseille to the villages of the Luberon, people gather around a piscine—French for “swimming pool”—both literally and on the table. In addition to an actual pool, a piscine refers to wine elongated with ice.

When it comes to the choice of wine for a piscine, rosé works especially nicely, and is common in the south of France. White wine? Perfectly acceptable. Bubbles? Absolutely. You could also piscine a kir, the classic French apéritif combination of dry white wine and black currant liqueur. Beyond the vin, the key to a superior piscine lies in: quality ice ; a big glass ; and, perhaps most important, an afternoon with not much else planned. The aim isn’t to inebriate, but rather to linger.

And take your time: Add a bit more ice , a bit more wine, repeat. —

In this traditional pesto pasta from the Liguria region of Italy, all of the vegetables cook along with the pasta in one pot. This shortcut is both faster than cooking the vegetables separately and makes the pasta taste better, too, as the noodles absorb some of the flavor from the vegetables as they cook. This is commonly done in Italy with all kinds of vegetables, especially greens, including tenerumi (the young leaves of a Sicilian squash) and frequently broccoli rabe. The vegetables may cook slightly differently each time you make this dish, but that’s part of the beauty of it. Rely on your gut and your own personal tastes—if you like your green beans very crisp (or they’re looking very thin and tender), add them a bit later, and so forth. Roman writer Ada Boni has a recipe from her 1929 cookbook 'Il Talismano della Felicità' (“The Talisman of Happiness,” which was published in a very abridged version in English as 'The Talisman') where the peppers, onions, and peeled and seeded tomatoes all go into the pot at the same time and are doused with some olive oil and salt, placed on a very low heat, and covered for an hour so that the whole thing slowly, slowly stews together. Right at the end, a glass of vinegar goes over the top and it's ready. I love the ease of her method: Pop it all in and let it cook slowly and steadily on its own. And because I love the sweetness of peppers too much, I don't add vinegar. But feel free to adjust as you please.

You can find it in practically every Tuscan and Ligurian port. Cleaning the octopus involves removing the eyes, beak, and innards, and rinsing under cold water—this is often already done when bought from a fishmonger or at a supermarket or if you have bought it frozen, but at my fresh-off-the-boat fisherman’s shop front, they are just as they were pulled out of the water. Freezing the fresh octopus helps to tenderize it; alternatively, you can buy it already frozen and defrost it at home. If you have a larger octopus, 45 to 60 minutes of cooking usually suffices. Baby octopus cooks in a much shorter time; 20 minutes can be plenty. Once cooled and chopped into pieces, it makes a delicious salad with potato, thinly-sliced celery, a handful of parsley, and a dressing of extra virgin olive oil and lemon juice (if you like, black olives go nicely here, too). Eat it room temperature or chilled—on a hot day, this is one of my very favorite meals.
