If you can't find the traditional somen noodles—a thin, wheat-based noodle—in your local market, they can easily be purchased on. You can also substitute thin soba noodles, or even capellini or angel hair pasta. You could even do it with rice noodles if you're cooking for someone who steers away from gluten.
Rinse the drained noodles right away with cool water to stop the cooking , and then plunk them down on a bed of ice—I like to dust the ice with a big pinch of salt first, which keeps the whole thing even colder, and keeps the noodles well seasoned. Splash some cold water on top just so the noodles settle a bit, then give everyone a bowl and the go-ahead to eat their iced noodles any way they want to.
