Pick your cheese like you would for a cheese platter, not as a mix in; it can be a star alongside the eggs.

Finally, give your Dinner of Scrambled Eggs a grand finale. At breakfast you might throw some hot sauce on your eggs, but at dinner you shower the eggs with fresh herbs, maybe lay on a slice of smoked salmon . Sprinkle pickly, briny bits like capers and chopped olives over your eggs. Or just give it a good swirl of olive oil.: Drizzle a little bit of olive oil on both sides of a pita and then lightly toast it in a skillet; meanwhile, soft scrambled a few eggs.
