Not only is the soup super-versatile, going from everyday dinner to a special occasion, but it's incredibly simple to make. You just throw everything—minus any diced cucumber and avocado you want to use as a garnish—into the blender. Unlike most cold soups, it doesn't need to be made ahead of time, because of a genius shortcut: you add a cup of ice cubes to the blender along with all the other ingredients, which instantly chills it.
