I'm the kind of gal that likes both sweet and savory breakfasts, which means that my diner order generally includes both the eggs,, and toast, plus a pancake for good measure. Just like using seltzer water inmakes a light and airy batter, when you add seltzer into pancake mix, tiny bubbles of air are infused into the batter, and expand when heated.
