Never thought our minds would be blown after trying a vegetarian bean stew recipe but here we are
in Brooklyn. As one of the first tables to get our order in that night, my friend and I were immediately swamped with food. The dish in question, a brooding mound of beans and grains topped with scattered chiles and herbs, sat undisturbed in the corner for at least 20 minutes while we demolished everything else, from fried fish sandwiches to fluke crudo. Finally, we turned to the stew.
“Initially I made the stew by adding meat to it, but after tasting the first batch I realized I didn’t want to take any attention away from the beans and grains,” he explains. "What is useful is to add flavorful highlights: spice, acid, herbs for brightness, breadcrumbs for texture, mushrooms for earthiness and umami. Everything in there has to have a specific purpose or you are just watering it down.
He cooks beans and grains sourced from a local farmer’s market in water with minimal seasonings, then combines them to order with a small arsenal of flavor bombs: pickled chiles, garlic chips and the oil they were fried in, croutons made from the best whole-grain sourdough he can get his hands on, and a generous pour of quality vinegar paired with a squeeze of lemon.
If it all sounds a bit highbrow, don’t worry: This stew is one of the most forgiving things I have ever cooked, because it doesn’t depend on any one element. You could add roasted or braised carrots , skip the garlic oil and chips, or use brown rice instead of the other grains . Danny’s one deal-breaker: no canned beans, since so much of the broth in this dish comes from the homemade bean-cooking liquid.
