A reader recipe so delicious, we just had to have it
by sharing their best recipes with us—and boy, did they deliver. Our Test Kitchen selected their favorite submissions in the following categories: weeknight dinner, vegetarian main, chocolate dessert, family recipe, and something spicy. These are the winning recipes—and the story behind the cooks who created them. Today,shares her family recipe for recipe for a spicy Italian bean and sausage soup.
is proof. It was inspired 10 years ago by a soup that her friend loved—from The Olive Garden. Curious but skeptical, Sander met her friend for lunch and ordered a different dish for herself. "After I tasted her soup, though, I was jealous that I didn't order it myself!" she said. The flavors of the meal stuck with her, and soon she found herself experimenting in her own kitchen, trying to recreate the flavors. What she came up with—a hearty but not heavy soup—received rave reviews from her husband/official recipe taster. The soup contains spicy sausage, plenty of garlic and onions, some red pepper for color, and a generous amount of cannellini beans. What makes it unique is the addition of almond milk , and her technique for thickening the soup.
Sanders credits her technique to trial-and-error—she prefers to experiment, rather than follow a strict recipe—and lessons from her mother and grandmother. They cooked everything from scratch with food from their garden, and that instilled a deep love of gardening and fresh veggies in her. They also subscribed to the "little bit of this, little bit of that," mentality that Sanders uses in her own kitchen. "It's important to taste and season as you go," she explains.
