Kind of brilliant.
. I know that some things are better in threes: An apple pie is better when you mix three different kinds of apples into it, and a grilled cheese is better with three different kinds of cheese. But what the Cowgirls' cookbook taught me is that if those three cheeses are also three different textures, you'll get a better melt.
For the creamiest middle possible, one of those three cheeses should be a soft fresh cheese. Soft cheese “acts as a suspension; just as egg whites suspend the heavier particles in a soufflé, so does the soft cheese suspend the grated cheese and distribute it more evenly across the bread.” When I don't have fromage blanc, which the Cowgirls recommend, I use regular old cream cheese, like I did the other day. The texture is much the same, and cream cheese is often easier to find than fromage blanc. Plus, you can use flavored cream cheese for an extra little upgrade.
Once I tried making a grilled cheese the Cowgirls' way, I never looked back. I love the way you can mound more shredded cheese between two slices of bread when it's all glued together with a soft cheese, and I love the multi-textured, pillowy pile of melted cheese that results. The options for the other two cheeses to complete your cheese trio are open to personal preference, but for a kids-of-all-ages classic that just begs to be dunked into tomato soup, the Cowgirls add equal parts cheddar and Monterey Jack to their fromage blanc. No one will complain if you do the same.
