Instead of breadcrumbs, I use a mixture of almond meal and corn meal to bind my gluten-free crab cakes. I shied away from using processed gluten-free breadcrumbs because the texture varies so much from brand to brand and risks inconsistent results, plus I wanted to keep these crab cakes as pure and natural as possible. I tried almond mealthe cornmeal first, but they turned out too mushy—I found that a little bit of cornmeal added just the right amount of extra crunch I wanted.

You could make my gluten-free crab cakes and serve them with anything you like. Recently I've been serving them with a raw snap pea salad packed with extra fresh mint, sliced radishes and scallions, and a lemony dressing because all those things are in season and they just feel so right together.
