The Misen chef’s knife is a good option for people who prefer a heavier knife. It has a thinner blade than many German-style knives and a half bolster , which makes it easy to choke up on the blade and get firm control. Half bolstered knives like this are also easier to sharpen than full bolstered ones. While we ultimately preferred lighter knives for everyday kitchen tasks, we understand the value of having a weightier blade for breaking down cuts of meat or slicing hardy root vegetables.
