Ahsoka isn't the first Jedi to train Sabine.

As a member of the Ghost crew in Star Wars Rebels, Sabine was instrumental in the fight against the Empire on the planet Lothal. As a Mandalorian, she became part of Mandalore's rich history, earning the right to wield the Darksaber.
Ahsoka’s first three episodes make it clear that Sabine was neglectful of her training since parting ways with Ahsoka prior to the events of the show. Her lightsaber duel with Force-wielding mercenary Shin Hati in Ahsoka’s debut episode was perhaps more difficult than it should have been, especially given Sabine’s previous history with the Darksaber.
Ahsoka Hasn't Even Mentioned Sabine's First Master In Star Wars Rebels season 3, Sabine is taught to wield the Darksaber by Jedi Knight Kanan Jarrus, an Order 66 survivor and fellow member of the Ghost crew. Though Rebels, like Ahsoka, mentions that Sabine has no natural affinity for the Force, she does learn to become one with the legendary blade and wields it sufficiently in combat, even against an experienced Jedi like Kanan.
But despite Kanan’s importance to Sabine’s story, his name has yet to be mentioned in Ahsoka. This seems counterintuitive – Sabine is frustrated with her progress, just as she was during the “Trials of the Darksaber” episode of Star Wars Rebels. The absence of any mention of Kanan is especially conspicuous considering their search for his missing Padawan Ezra, along with the fact that Ahsoka and Kanan had known each other since the Clone Wars.
Ahsoka Is Paralleling Sabine & Kanan In Ahsoka’s third episode, Ahsoka tries to teach Sabine using the “Zatochi” Jedi training technique, during which Sabine’s vision is obstructed with a mask, and she needs to learn to anticipate Ahsoka’s movements. This scene directly parallels a sequence in which Kanan needs to relearn how to trust in the Force and himself, as well.
