Observed splitter installed at mop sink without back flow device on non chemical side of splitter. High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Chicken and shrimp held above fill line in fliptop at 46-54F. Person in charge chilled below 41F during inspection. **Corrected On-Site** **Repeat Violation** **Admin Complaint** High Priority - Food-contact surfaces sanitized with a quaternary ammonium solution not exposed to the sanitizer solution for at least 30 seconds. Do not use equipment/utensils not properly sanitized. High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Butter held under time control on cook line not time marked. Chef stated butter was taking out of the cooler 30 minutes ago. Cook properly time marked butter.
High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure.
