Made the spicy chicken stock and soup while I was fighting a cold. I used cubed sweet potatoes instead of the squash and thought it was delicious!Kabocha is my favorite squash, and yes, it can sometimes be hard to find—but I made this with Butternut squash and that worked just as well. Like the recipe says, you can choose your vegetables.
I was really happy to find this as a way to change up the more common kinds of chicken soup. I added some sugar snap peas and used kale with the cabbage, plus some green onions—a great flavor mix. And I love that the recipe serves 8-10...if you make something, it's great to have it in sufficient quantity to bring it back to the table again.
