Shoutout to all of those crunchy vegetables on top of that soup
This is delicious and easy to make. The flavour is wonderful. Don’t be intimidated by the spices. They add wonderful flavor without being overwhelming.This recipe is golden. Super easy on cleanup and prep. I added a little white wine vinegar at the end for some zing since I didn’t have cilantro/lemon for a topping. Since I already have the mortar & pestle out to grind the coriander I make own spice blend to use instead of the curry powder, so it’s infinitely customizable.
Also added some crispy chickpeas to the top. This is a must cook!I loved this recipe so much I was compelled to write a review. Excellent flavors, and great way to use up baby carrots. Highly recommend!Absolutely delicious. Highly recommend whether for a time crunch or a take-your-time kind of dinner night, this meal is flavourful, fragrant, and filling . The ingredients are very inexpensive. Even my pal who detests cooked carrots loved this soup.
