Running McDonald’s during the pandemic has been a challenge for Chris Kempczinski. Keeping up with Americans’ changing tastes might be an even bigger test for the CEO.

CHICAGO—McDonald’s Corp. Chief Executive Chris Kempczinski is starting the year at the helm of one of the world’s most recognizable restaurant brands battling the latest coronavirus variant, rising inflation and workforce shortages.

Now, the Omicron variant is driving infections to record levels in the U.S., raising further questions about how consumers will respond. Mr. Kempczinski said the pandemic showed that McDonald’s needed a more focused menu, one built around burgers, chicken and coffee. McDonald’s U.S.from its restaurants continuing to serve customers throughout the pandemic, and the chain’s chicken business has grown since the debut of new sandwiches last February, he said.

Staffing challenges mean McDonald’s U.S. locations are open fewer hours, on average, than they were before the pandemic.The company is trying to generate sales without clogging up its menu, Mr. Kempczinski said, as new food options rarely last years.
