The green salsa is a condiment that features prominently in other menu items, including the brisket quesadillas and pulled pork grilled cheese sandwich. Macal makes the salsa himself by roasting and smoking jalapeno and serrano peppers, tomatillos, onion and garlic. It’s worthy of being bottled and sold on its own.
If you’re craving the classic Texas trinity of brisket, pork ribs and sausage, Macal serves a top-notch version of that, too. The sausage is housemade, with Macal collaborating with friend and fellow barbecue aficionado Gabriel Fuentes on the recipes and production. On a recent Saturday, the sausage featured a beef-and-pork blend mixed with queso fresco and poblano peppers.
On one side of the trailer is the La Cruda name and logo along with an image of the Houston skyline and the words “I sure [heart] brisket,” a phrase often used by Macal’s young son when his father started making barbecue.
