Bill Welter, owner of Journeyman Distillery, will join patrons to lift a glass in October at the grand opening of the $40 million Valparaiso location in downtown Valparaiso, a project which has fought challenges and delays since announced in 2018.
“It’s no secret or surprise that this adventure has come with more than a few delays and surprises, including everything associated with the COVID pandemic, and then increased construction costs with the project,” said Welter, 47 and a 1995 graduate of Valparaiso High School.The new Journeyman Distillery in Valparaiso is set to open in the coming weeks at the site of the former Anco windshield wiper plant south of the city's downtown.
At the Sept. 11 Valparaiso City Council meeting, the council passed an ordinance approving “a designated outdoor refreshment area” granted based on discussion centered on the new Journeyman Distillery operations in Valparaiso. The large landscape of connected buildings and courtyards required allowance of “open alcohol containers” for guests to move throughout the varied spaces with some events likely to draw as many as 2,500 guests.
In addition to the brewery, distillery and the Union Hall Restaurant, there’s 140,000 square feet dedicated to a trio of event spaces at the new Valparaiso location to serve parties of 25 to 1,200. Lorelei Weimer, director of Indiana Dunes Tourism, said the new Journeyman Distillery operations in Valparaiso will be a key catalyst to extend the stays and spending of visitors to Valparaiso and Porter County.
