Life for chef Joe Brown changed dramatically on May 23, 2013. That day, customers were eating lunch inside Melange @ Haddonfield, his restaurant on Tanner Street. He spotted two police officers and two agents from the state of New Jersey, seekingBrown, behind on Melange’s payment plan, told them that he had recently sent money to Trenton. But he didn’t have the $71,875.08 the agents wanted. He walked into the dining room and asked his customers to finish their meals.

That’s pretty much what I felt when I cook for people. It happens right here at the church. When I’m cooking for the pastors, it reminds them of something that they had in the past. You can see their mood change and that’s what my food does.
At the Landmark, Brown oversaw the food at the dining room and banquet hall until the Pirates Inn called with an offer to come back as executive chef. He left in 1995 to open his restaurant.
