Looks like you can have your cake and eat it too.
The flavor is good and the cake is moist but I too had a disaster because coconut oil and almond flour are NOT the best way to prepare a pan. the cake stuck to the pan. I would HIGHLY recommend oil then a round of parchment paper. The cake has to be handled delicately. 4 stars because of the pan. Somehow I cannot deselect the fifth star.I LOVE this recipe! I made it a couple years ago for Easter for my family. Being gluten free, I miss a good carrot cake .
I followed the recipe exactly without any modifications.Outstanding! I follow the recipe exactly through Step 5. Then, instead of two cake pans, I pour the batter into one 9 x 13 pan. After baking and icing, half of the cake is stored in the freezer for another time. It freezes well, with no loss of flavor or moistness.The cake is phenomenal. The frosting/icing tastes good but is super runny. Not sure what went wrong.I am relatively new to baking, so this was a first carrot cake attempt for me.
