A big kitchen this ain’t. It takes a little while for cooks in Birgit and Kevin Hust’s restaurant to get acclimated. That’s because they’re cooking inside a trailer. “At the Fourth of July event, we had four people inside, and if you, for whatever reason, turned the wrong way, you bumped elbows with somebody,” Kevin said. “It took us 30 minutes to figure out ‘OK, you turn this way, I turn that way and we can make this roll.

The main item would update language in the city ordinance to recognize food trailers, which are enclosed spaces that can be hitched up to a trailer, including converted shipping containers. Cooking can happen outdoors in a covered area adjoining the trailer. If you’re surprised that this restriction even exists in Dallas, that’s because it’s rare. City staff researched 18 peer cities in the U.S., including Austin and Nashville, and found that only Dallas had limitations on the types of food that can be cooked in food trucks and trailers.
