This is not the common interpretation of an American deli – which is morphing into a diner -- but a pre-industrialization Jewish deli where everything is handcrafted.“We felt a real deli, before we industrialized our food, is not what the deli had become in America. Prior to World War II, food hadn’t been completely industrialized,” says Umansky. “It was handmade in small batches. We wanted the emulate that pre-World War II time period.
Finally, it’s smoked and cooked. By contrast, most delis don’t have time, space and patience for all the steps, thus the already processed product is delivered.
