The kolache bakery that claims it started it all, at least in Houston, officially opened in 1966. Since then, it's been pumping out Czech pastries nonstop and has now led to the creation of its own coffee brand, Zeppelin Coffee.From the moment you walk in, there's a certain warmth in the slightly cramped shop along Telephone Road. Even at a late hour, you will likely find two or more people waiting in line to get a kolache or klobasnek to take on the road.
The Original Kolache Shoppe was the first place I tried to kick-start this guide, and it became the litmus test by which every other shop was judged. The here are stunners: decadent, gooey jams tucked into fluffy breading and punctuated with little flakes of salt.GALVESTON TX DEC 17: Freshly baked kolaches are placed on display trays at Good Dough Bakery in Galveston, Texas.When I mentioned to Houston Chronicle restaurant critic Alison Cook that I was doing a kolache guide, she saidthis Galveston gem. She was right. Good Dough is one of the best kolache places I've visited in Texas — period.
As the name implies, I was thoroughly impressed with the kolache dough here. A blueberry variety had a bread that seemed to toe the line between fluffy and dense. And farther in, the fruit jam inside held a tartness and freshness that I haven't been able to find at any other kolache shop. Below the jam was a layer of cream cheese that only helped to deepen the flavors.
